Oh, Monday – we meet again. After a delightfully relaxing weekend (complete with wine and LOTS of binge-watching Netflix), I was NOT ready to face this week. It’s the time of year when I tend to start feeling overwhelmed and stressed at work, and the last thing I wanted to do when I got home was write a blog post. Soooooo I took a nap. That’s okay though – I’m rested, fed, and sitting down with some Bedtime tea, and it’s officially #mealplanmonday time!
Sunday – Home Chef Pork Tenderloin with Basil-Pecorino Cream Sauce (didn’t get around to this on Friday or Saturday, but it was worth the wait!)
Monday – I forgot to put the chicken in the crockpot this morning (#becausemonday), so I made brinner – pancakes, bacon and scrambled eggs
Tuesday – buffalo chicken sandwiches (fresh baked french bread, cheddar jack cheese, and shredded buffalo chicken with some lettuce and a drizzle of ranch… and a side salad so I don’t feel quite as guilty)
Wednesday – Home Chef Mesquite Filet Mignon with cheddar mashed potatoes (I always make filet on Valentines Day, so this will work perfectly!)
Thursday – Home Chef Chicken Fajita Stuffed Peppers
Friday – out for happy hour and picking up a wine shipment 🙂
My weekly Home Chef review will most likely be coming tomorrow – we didn’t get around to the third meal until last night, so I wouldn’t have able to write it on my usual day without pushing back my bedtime (which was not happening on a Sunday – sorry!). I still have a couple weeks left, but from my quick preliminary statistics, I’ve been spending about $5 less per week on food since we started getting Home Chef. (That includes groceries and eating out.) I want to do a little more analysis once the eight weeks is over (sorry – math nerd tendencies!), but that is really not too bad!
