Monday already? How did that happen?! I don’t know about you all, but I was definitely not ready for Monday to happen this week – and I didn’t even stay up to watch the Super Bowl! I just feel like there’s so much to do in so little time this time of year, and I just didn’t accomplish enough. Oh well, though – time to get back at it. Here’s this week’s meal plan!
Sunday – Skinnytaste Santa Fe Chicken (one of my favorite recipes of all time because of its versatility) over brown rice with shredded cheddar and greek yogurt (leftovers are lunches all week!)
Monday – I actually have no idea – hubs has a meeting so I’m on my own. We’ll see if I feel like cooking or just ordering something.
Tuesday – Ribs (I may post my super easy and delicious in the oven recipe later this week!), mac and cheese, and cole slaw
Wednesday – Home Chef Italian Sausage and Broccoli Pasta (this looks so good!)
Thursday – Home Chef Huli Huli Chicken Rice Bowl with charred pineapple
Friday or Saturday – Home Chef Pork Tenderloin with Basil-Pecorino Cream Sauce, seared carrots, and green beans
