I hope you all had a great first week of 2018! Mine was a little bit of a roller coaster – I went back to work for two days, then had an unexpected two days off because of a little bit of snow and ridiculously low wind chills. I didn’t even bring any school work home with me on Wednesday because I figured I’d have time to do it during planning… oops! The days off ended up being a blessing in disguise, though – I came down with a bad cold on Thursday and spent a good chunk of Thursday, Friday, and Saturday in bed. Thankfully, I am on the upswing, and I’m hoping I feel decent enough to start a new school week tomorrow… unfortunately, being out this week is just not an option so I’ll have to tough it out.
Alright, back to meal planning! When I was going through some old emails on Thursday, I found one from Home Chef that sounded interesting. Home Chef is one of those meal delivery services that sends you portioned ingredients and recipes every week – I have tried almost all of those services, and really like the convenience and variety but have been “meh” when it comes to doing it for full price. Home Chef’s email reminded me that I had a $5 credit in my account, plus offered me $10 off up to 8 weeks of deliveries if I reactivated. We really liked the meals we had before, and that is a pretty good deal since we usually get a full serving for each of us for dinner plus a leftover lunch serving out of most recipes, so I decided to go for it. Along the way, I’m also going to compare my grocery spending with a “normal” no meal service month, and see if sticking with them long-term would make financial sense. I’ll also review the recipes in the following week’s Meal Plan Monday – they are doable without the delivery as well, so I’m hoping to add some more good recipes to my arsenal! Friday/Saturday – out / Home Chef Pork Chops with Cauliflower Grits
