meal plan monday #7

Hi everyone – I hope you had a great weekend and that your week has started well! I’m here to share my #mealplanmonday for this week – I am pretty excited about a couple of the recipes I have to share πŸ™‚ I am trying to re-focus on healthier eating and hoping to start exercising again, so this meal plan will have a healthy-ish twist. I am still working on getting better with this, especially cutting down on the wine and beer, so future meal plans should be progressively more healthy.

MondaySkinnytaste Baked Chicken Parmesan (pictured at right from my Instagram story – sooooooooooo good!) with whole wheat pasta, marinara, and arugula salad

Tuesday – country style pork ribs using this recipe (beef short ribs were on sale, but they had run out – thankfully she includes an edited recipe for pork near the end!), with riced cauliflower

Wednesday – roasted chicken leg quarters with frozen Tuscan grain mix

Thursday – pork chops with frozen Southwest grain mix or frozen broccoli

Friday – out πŸ™‚ happy weekend!
