Hi everyone – I hope you had a great weekend and that your week has started well! I’m here to share my #mealplanmonday for this week – I am pretty excited about a couple of the recipes I have to share 🙂 I am trying to re-focus on healthier eating and hoping to start exercising again, so this meal plan will have a healthy-ish twist. I am still working on getting better with this, especially cutting down on the wine and beer, so future meal plans should be progressively more healthy.
Tuesday – country style pork ribs using this recipe (beef short ribs were on sale, but they had run out – thankfully she includes an edited recipe for pork near the end!), with riced cauliflower
Wednesday – roasted chicken leg quarters with frozen Tuscan grain mix
Thursday – pork chops with frozen Southwest grain mix or frozen broccoli
Friday – out 🙂 happy weekend!
